Indian Style Baked Chicken with Sweet Potato

Method

  • Step 1

    Prepare ahead - make the marinade by placing all the ingredients into a bowl and mix together.

  • Step 2

    Score the skin of the chicken thighs, add to the marinade and coat the chicken thighs with the marinade. Allow to marinate for at least 2 hours or overnight if possible.

  • Step 3

    Ready to cook - place the sweet potatoes, peppers and onions onto a roasting tray, drizzle with oil and top with the marinated chicken thighs. Bake in a preheated oven at 180°C for 30-40 minutes.

  • Step 4

    Once the chicken is cooked and the skin is crispy, add fresh coriander. Serve with pilau rice.
