Heritage Tomato and Mozzarella Salad

Enjoy the vibrant flavours of heritage tomatoes in a simple, delicious salad that is perfect as a light lunch
Method

Step 1
Make the dressing - place the olive oil, garlic and fresh herbs into a blender and blend on full power for 30 seconds. Season with salt and pepper to taste.

Step 2
Cut the tomatoes into slices and wedges and arrange on 4 individual plates, or serve on one platter.

Step 3
Tear the mozzarella into 4 pieces and place in the centre of the tomatoes, or tear into smaller pieces and scatter over the platter.

Step 4
Drizzle the herb dressing over the top of the dish, sprinkle over some sea salt and black pepper and garnish with fresh basil leaves.
